Soft and buttery blondies bursting with fresh strawberries and bright lemon flavor, finished with a sweet strawberry lemon glaze for the perfect spring and summer dessert.

Ingredients

For the Blondies
½ cup (115 g) unsalted butter, melted
¾ cup (150 g) granulated sugar
1 large egg
2 tbsp fresh lemon juice
1 tbsp lemon zest
1 cup (125 g) all-purpose flour
¼ tsp salt
1 cup (150 g) fresh strawberries, diced
For the Glaze
1 cup (120 g) powdered sugar
2 tbsp fresh lemon juice
2 tbsp strawberry puree or finely mashed strawberries

Instructions

Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth.
Add the egg, lemon juice, and lemon zest, mixing until fully incorporated.
Stir in the flour and salt just until combined. Do not overmix.
Gently fold in the diced strawberries.
Spread the batter evenly into the prepared baking pan.
Bake for 30–35 minutes, or until the edges are lightly golden and the center is set.
Remove from the oven and allow the blondies to cool completely in the pan.
To prepare the glaze, whisk together the powdered sugar, lemon juice, and strawberry puree until smooth.
Spread the glaze evenly over the cooled blondies.
Allow the glaze to set before slicing into squares and serving.

Notes

Use fresh, ripe strawberries for the best flavor and texture.
Avoid overmixing the batter to keep the blondies soft and tender.
Drain frozen strawberries thoroughly if using them instead of fresh.
Let the blondies cool completely before glazing to prevent the glaze from melting.
For cleaner slices, chill the blondies for 15–20 minutes before cutting.
