Fresh peaches, peppery arugula, and creamy cheese come together in this light and refreshing summer salad with a sweet tangy dressing.

Ingredients

4 ripe peaches (pitted and sliced)
6 cups fresh arugula
1/2 cup crumbled goat cheese or feta cheese
1/4 cup toasted pecans or walnuts
1/4 red onion (thinly sliced)
1/4 cup fresh basil leaves (torn, optional)
3 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth and well combined. Adjust seasoning if needed.
Assemble the Salad: In a large bowl, combine arugula, sliced peaches, goat cheese (or feta), toasted pecans (or walnuts), and red onion. Add basil if using.
Toss: Drizzle the dressing over the salad and gently toss to evenly coat all ingredients.
Serve: Transfer to a serving dish or plates and serve immediately for best freshness.
