Creamy cottage cheese, melty parmesan, and crispy sourdough come together in this easy pizza toast recipe perfect for breakfast or lunch.

Ingredients

1 clove garlic
1 large slice sourdough bread
1/4 cup cottage cheese
1 tablespoon finely grated Parmesan cheese, plus extra for topping
1 tablespoon drained and chopped sun-dried tomatoes in oil
1/4 teaspoon dried oregano
Olive oil, for drizzling
Optional Toppings
Fresh basil leaves
Red pepper flakes

Instructions

Step 1: Preheat

If using an oven broiler, preheat on high heat with the oven rack positioned about 4 inches below the heating element.

Step 2: Prepare the Bread

Peel the garlic clove and slice it in half. Rub the cut side of the garlic all over the sourdough bread to infuse it with flavor.

Step 3: Make the Topping

In a small bowl, combine the cottage cheese, Parmesan cheese, chopped sun-dried tomatoes, and dried oregano. Stir until evenly mixed.

Spread the mixture evenly over the bread. Sprinkle with extra Parmesan cheese if desired and drizzle lightly with olive oil.

Step 4: Toast

Place the toast in a toaster oven or on a foil-lined baking sheet under the broiler.

Toast for 2–6 minutes until the bread edges are golden brown and the cheese is warm and slightly melty. Watch carefully to avoid burning.

Step 5: Serve
