This Kale Caesar Pasta Salad combines crisp kale, tender pasta, and creamy Caesar dressing for a fresh and satisfying meal. Perfect for lunches, potlucks, and easy dinners.

Ingredients

For the Salad
8 oz rotini or bowtie pasta
1 large bunch kale, stems removed and leaves chopped
1 cup croutons
½ cup Parmesan cheese, freshly grated
1 cup cherry tomatoes, halved (optional)
1 cup grilled chicken, sliced (optional for a complete meal)
For the Caesar Dressing
½ cup mayonnaise
2 tablespoons Greek yogurt
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 cloves garlic, minced
2 teaspoons Worcestershire sauce
¼ cup Parmesan cheese, grated
¼ teaspoon black pepper
Salt to taste

Instructions

Cook the pasta according to package directions until al dente.
Drain and rinse under cold water to stop the cooking process. Set aside.
In a large bowl, massage the chopped kale with a pinch of salt for 1–2 minutes until softened.
In a separate bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic, Worcestershire sauce, Parmesan, pepper, and salt.
Add the cooled pasta to the kale.
Pour the dressing over the pasta and kale mixture.
Toss until everything is evenly coated.
Stir in Parmesan cheese and cherry tomatoes if using.
Just before serving, add the croutons and toss lightly.
Garnish with extra Parmesan cheese and freshly cracked black pepper.

Notes

Massaging the kale helps reduce bitterness and improves texture.
Add grilled chicken, shrimp, or salmon for extra protein.
Store croutons separately if making ahead to keep them crunchy.
The salad can be refrigerated for up to 3 days.
Use whole wheat or gluten-free pasta if preferred.
