Simple and flavorful Japanese Zucchini & Onion Stir-Fry with tender zucchini, caramelized onions, and a savory teriyaki glaze for a quick and delicious side dish.

Ingredients

2 tbsp vegetable oil (or avocado oil)
1 medium onion, thinly sliced
2 medium zucchini, cut into thin strips
2 tbsp teriyaki sauce (preferably sugar-free)
1 tbsp soy sauce (or tamari)
1 tbsp toasted sesame seeds
Ground black pepper, to taste

Instructions

Heat oil in a large skillet or wok over medium-high heat until shimmering.
Add sliced onions and stir-fry for 2–3 minutes until softened and lightly golden.
Add zucchini strips and cook for 5–7 minutes until tender-crisp, avoiding overcrowding.
Push vegetables to one side and pour in teriyaki and soy sauce. Let it bubble briefly.
Toss everything together until evenly coated in the glaze.
Season with black pepper and cook for another minute.
Remove from heat and transfer to a serving dish.
Sprinkle with toasted sesame seeds and serve immediately.

Notes

Keep heat high to avoid soggy vegetables.
Do not overcook zucchini—it should remain slightly firm.
Add sesame oil at the end for extra flavor.
Works well with added protein like tofu, shrimp, or chicken.
