Homemade funfetti marshmallow popcorn treats loaded with gooey marshmallows, colorful sprinkles, and sweet vanilla flavor for the perfect fun dessert.
3 tablespoons butter
7 cups popped popcorn
1 teaspoon vanilla extract
1 scoop cake batter protein powder
50 regular-size marshmallows
Funfetti sprinkles
Optional:
Melted white chocolate, for drizzling
Prepare about 7 cups of popped popcorn using your preferred popping method. Place popcorn in a large mixing bowl and remove any unpopped kernels.
In a large saucepan over low heat, melt the butter. Add marshmallows and stir until fully melted and smooth.
Remove from heat and stir in vanilla extract and cake batter protein powder until combined.
Pour the marshmallow mixture over the popcorn and gently toss until evenly coated.
Add Funfetti sprinkles and lightly toss again to distribute throughout the mixture.
Transfer to a parchment-lined baking dish or sheet pan. Press into an even layer using a spatula or lightly greased hands.
If desired, drizzle melted white chocolate over the top and add extra sprinkles.
Let the treats cool and firm up for about 30 minutes. Cut into squares or break into clusters before serving.
Lightly grease your hands or spatula to prevent sticking when pressing the mixture into the pan.
Use air-popped or lightly salted popcorn for best flavor balance.
Store in an airtight container at room temperature for up to 3 days.
