Ingredients

For the Cream Layer:

1½ cups cottage cheese (low-fat or full-fat)
23 tablespoons honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon lemon zest (optional)

For the Coffee Layer:

1 cup strong brewed espresso or coffee (cooled)
1 teaspoon cocoa powder (optional)
1 tablespoon coffee liqueur (optional)

For the Layers:

1216 ladyfinger biscuits (or whole-grain sponge fingers)
Unsweetened cocoa powder (for dusting)

Instructions

Blend the cream: Add cottage cheese, honey, vanilla, and lemon zest to a blender. Blend until smooth and creamy.
Prepare coffee: Brew strong coffee or espresso and allow it to cool. Add cocoa powder or liqueur if desired.
Dip biscuits: Lightly dip each ladyfinger into the coffee—avoid soaking too long.
Layer: Place a layer of dipped biscuits in a dish, spread cream over them, and repeat layers.
Finish: End with a layer of cream on top.
Chill: Refrigerate for at least 4 hours or overnight.
Serve: Dust with cocoa powder before serving.

Notes

Blend cottage cheese thoroughly for a smooth mascarpone-like texture.
Adjust sweetness based on preference.
Add berries or protein powder for variations.
Best enjoyed chilled after resting overnight for enhanced flavor.
