Juicy steak bites and crispy golden potatoes tossed in rich garlic butter make this easy skillet dinner a family favorite. Perfect for busy weeknights and hearty meals.

Ingredients

For the Steak
lbs sirloin steak, cut into 1-inch cubes
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 tablespoon olive oil
For the Potatoes
lbs baby Yukon Gold potatoes, quartered
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
For the Garlic Butter
4 tablespoons unsalted butter
5 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves (optional)

Instructions

Pat the steak bites dry with paper towels and season with salt, pepper, and paprika.
Toss the potatoes with olive oil, salt, pepper, and paprika.
Heat a large skillet over medium-high heat and add 2 tablespoons olive oil.
Cook the potatoes for 12–15 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
In the same skillet, add 1 tablespoon olive oil.
Sear the steak bites in a single layer for 1–2 minutes per side until browned. Work in batches if necessary.
Remove the steak and reduce heat to medium.
Add butter and garlic to the skillet. Cook for 30 seconds until fragrant.
Return the potatoes and steak bites to the skillet.
Toss everything in the garlic butter until evenly coated.
Stir in parsley and thyme.
Serve immediately while hot.

Notes

Sirloin, ribeye, or New York strip steak work well.
For extra crisp potatoes, parboil them for 5 minutes before skillet cooking.
Avoid overcrowding the pan when searing steak to achieve a proper crust.
Add red pepper flakes for a spicy kick.
Pair with roasted vegetables or a fresh salad for a complete meal.
