Juicy chicken simmered in a rich creamy Tuscan sauce with parmesan, garlic, tomatoes, and kale for an unforgettable dinner recipe.
Chicken
2 lbs organic chicken breasts
2 tbsp extra virgin olive oil
1 tsp sea salt
2 tsp all-purpose seasoning blend
Tuscan Cream Sauce
4 tbsp unsalted butter
1 tbsp extra virgin olive oil
4 garlic cloves, minced
1½ tbsp Tuscan seasoning blend
1 tsp sea salt
1½ cups organic heavy cream
1 cup organic chicken stock or broth
3 tbsp white cooking wine (or additional chicken broth)
Juice of ½ lemon
1 cup freshly grated Parmesan cheese
1 tbsp tomato paste
1–2 cups grape or cherry tomatoes, halved or whole
1 cup organic kale, chopped
1. Season the Chicken
Place the cleaned chicken breasts in a large bowl.
Season with sea salt and all-purpose seasoning blend.
Mix well until evenly coated and let rest for 5–10 minutes.
2. Sear the Chicken
Heat a large 12-inch skillet over medium-high heat.
Add the butter and allow it to melt completely.
Add the minced garlic and sauté for 1–2 minutes until fragrant.
Add the seasoned chicken breasts and sear for 3–4 minutes per side, until golden brown.
Remove the chicken from the skillet and set aside on a plate.
3. Start the Tuscan Sauce
In the same skillet, add the olive oil.
Stir in the Tuscan seasoning blend and sea salt.
Add the tomato paste and cook for 1 minute, stirring until combined.
4. Create the Cream Sauce
Reduce the heat to medium-low.
Slowly whisk in:
Heavy cream
Chicken broth
Lemon juice
White cooking wine
Allow the sauce to gently bubble for 1–2 minutes.
Add the grated Parmesan cheese and whisk continuously until melted and the sauce begins to thicken, about 2–3 minutes.
5. Add Vegetables and Chicken
Stir in the chopped kale and tomatoes.
Return the seared chicken breasts to the skillet.
Spoon some sauce over the chicken.
6. Simmer
Cover loosely and simmer for 15–20 minutes, or until the chicken is fully cooked and tender.
Stir occasionally and continue spooning sauce over the chicken during cooking.
7. Serve
Remove from heat.
Serve with your favorite side dishes such as:
Gnocchi
Pasta
Rice
Roasted vegetables
Mashed potatoes
Garnish with additional grated Parmesan cheese if desired.
Chicken thighs can be substituted for chicken breasts for extra tenderness.
Sun-dried tomatoes can be added for a deeper Tuscan flavor.
Freshly grated Parmesan melts more smoothly than pre-packaged cheese.
If the sauce becomes too thick, add a splash of chicken broth to loosen it.
Kale can be replaced with spinach for a milder flavor.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
