A quick and easy snack recipe made with wholesome ingredients like shredded carrots, chia seeds, walnuts, and coconut for a delicious energy boost.

Ingredients

1 cup Medjool dates, pits removed
1/3 cup shredded carrots
1 cup walnuts
1 tbsp chia seeds
1/3 cup shredded unsweetened coconut
1/2 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
1 tsp vanilla extract
Extra 1/2 cup shredded coconut, for rolling

Instructions

Add the Medjool dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract to a food processor.
Pulse until the mixture is fully combined and sticks together when pressed.
Scoop out portions of the mixture using a spoon or cookie scoop and roll into bite-sized balls.
Roll each energy ball in the extra shredded coconut until evenly coated.
Place the energy balls in the refrigerator for at least 1 hour to firm up before serving.

Notes

If the mixture feels too dry, add 1–2 extra dates.
Store in an airtight container in the refrigerator for up to 1 week.
These energy balls are freezer-friendly for up to 3 months.
Add raisins or pecans for extra carrot cake flavor.
