Ingredients

4 thick white cod fillets
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 medium onion, sautéed until translucent
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 can full-fat coconut milk
3 tablespoons fresh lemon juice
1 teaspoon lemon zest

Instructions

Preheat oven:
Preheat your oven to 180°C (350°F).
Season the fish:
Sprinkle salt and pepper evenly over the cod fillets.
Prepare the sauce:
In a skillet, heat olive oil over medium heat. Sauté the onion until translucent. Add garlic and ginger, cooking until fragrant.
