Apple cheesecake streusel buns are soft fluffy pastries filled with creamy cheesecake and spiced apple filling then topped with a buttery crumble. A perfect bakery style treat for breakfast or dessert.

Ingredients

For the Dough:

400 g (4 cups) all-purpose flour
200 ml (1 cup) whole milk, warmed
1 large egg
65 g unsalted butter, softened
10 g instant yeast
60 g (3 tbsp) granulated sugar
1 packet (8 g) vanilla sugar
Pinch of salt

For the Cheesecake Filling:

200 g cream cheese
2 tbsp sugar
1 packet vanilla sugar

For the Apple Filling:

2 apples, peeled and diced
2 tbsp brown sugar
1 tsp cinnamon
1 tsp cornstarch mixed with ½ cup water

For the Streusel Crumble:

20 g (1 tbsp) cold butter
1 tbsp sugar
½ cup flour

For the Glaze:

1 cup powdered sugar
2 tbsp milk

For Egg Wash:

1 egg yolk

Instructions

Prepare the Dough
Mix all dough ingredients and knead until smooth and elastic. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Cook the Apple Filling
Sauté diced apples with brown sugar and cinnamon until soft. Stir in the cornstarch slurry and cook until thickened. Allow to cool completely.
Make the Cheesecake Filling
Whisk cream cheese, sugar, and vanilla sugar until smooth and creamy.
Shape the Buns
Punch down the dough and divide into 9 equal portions. Shape into balls, place on a lined tray, and let rest for 15 minutes.
Create Indentations
Press the center of each dough ball using a floured glass or your fingers to form a deep well.
Fill the Buns
Brush edges with egg yolk. Add 1 tablespoon cheesecake filling and 1 tablespoon apple filling into each center.
Prepare Streusel
Rub butter, sugar, and flour together until crumbly. Sprinkle over each bun.
Bake
Bake at 180°C (350°F) for 20–25 minutes, until golden brown.
Glaze & Serve
Drizzle with powdered sugar glaze once slightly cooled.

Notes

Ensure fillings are cooled before assembling to avoid soggy dough.
Don’t overfill to prevent leaking أثناء baking.
For extra flavor, add a pinch of nutmeg to the apple mixture.
Best enjoyed warm, but can be stored and reheated gently.
