Crispy air fryer cheese stuffed onion rings loaded with gooey melted cheese and coated in crunchy panko breadcrumbs. A perfect appetizer or party snack.
For the Onion Rings
2 large yellow onions
8 ounces mozzarella or cheddar cheese block
½ cup cornstarch
½ cup all-purpose flour
1 teaspoon paprika
1 teaspoon ground turmeric
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon black pepper
¼ cup water (plus more if needed)
2 cups plain panko breadcrumbs
Olive oil cooking spray
For the Dipping Sauce
½ cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon minced garlic (about 3 cloves)
Slice the onions horizontally into 1½-inch-thick rings. Separate the onion layers and pair larger rings with smaller rings, leaving a gap between them for the cheese filling.
Slice the cheese into ⅛-inch-thick strips, then cut them to match the height of the onion rings.
Place the cheese strips between the paired onion rings, filling the gap completely. Use smaller pieces of cheese to fill any spaces.
In a shallow bowl, whisk together the cornstarch, flour, paprika, turmeric, garlic powder, salt, and black pepper. Gradually add water until a thick batter forms.
Place the panko breadcrumbs in a separate shallow dish.
