Quick, creamy, and cheesy Rotel Dip Recipe made with ground beef, Velveeta, and Ro-Tel. Perfect party appetizer for game day, holidays, or easy snacking.

Ingredients

1 lb ground beef
16 oz Velveeta cheese, cubed
1 can (10–16 oz) Ro-Tel diced tomatoes and green chilies (undrained)

Instructions

Step 1: Cook the Beef
Heat a large skillet over medium heat. Add the ground beef and cook until fully browned. Drain excess grease.

Step 2: Melt the Cheese
Reduce heat to low. Add cubed Velveeta cheese to the skillet. Stir slowly until the cheese begins to melt.

Step 3: Add the Rotel
Pour in the entire can of Ro-Tel (including liquid). Stir well to combine.

Step 4: Mix Until Smooth
Continue stirring until the mixture is fully melted and creamy. Add a splash of milk if needed to thin the dip.

Step 5: Serve Warm
Transfer to a serving bowl or slow cooker. Serve immediately with chips, crackers, or fresh veggies.
