Ingredients

1 rotisserie chicken, shredded

1 (12-ounce) bag frozen peas and carrots

Salt and black pepper, to taste

Sauteed garlic or garlic powder (optional)

2 cups Cheddar Bay biscuit mix

2 cups milk

2 cups chicken stock

1 (10.5-ounce) can cream of chicken soup

1 stick salted butter

Instructions

Preheat the oven to 350°F (175°C). Place the stick of butter in a 9×13-inch baking dish and put the dish in the oven to melt the butter while the oven heats.

Once the butter has melted, remove the pan from the oven. Spread the shredded rotisserie chicken evenly over the melted butter.

Add the frozen peas and carrots on top of the chicken in an even layer. Season with salt, black pepper, and optional garlic or spices. Do not stir.

In a mixing bowl, whisk together the biscuit mix, the seasoning packet (if included), and the milk until smooth. Carefully pour this mixture evenly over the chicken and vegetables. Do not mix the layers.

In another bowl, whisk together the chicken stock and cream of chicken soup until smooth. Slowly pour this mixture over the top of the casserole. Again, do not stir.

Bake uncovered for 45–50 minutes, or until the top is golden and the casserole is bubbling.

Remove from the oven and allow the dish to rest for 10–15 minutes. The sauce will thicken into a rich gravy-like consistency.

Serve warm with a generous sprinkle of fresh cracked black pepper.
