A hearty one-pan dinner with savory sloppy joe meat, crispy tater tots, and melted cheese – comfort food made easy.
1 lb ground beef
1/2 cup onion, finely chopped
1/2 cup bell pepper, chopped (optional)
2 cloves garlic, minced
3/4 cup ketchup
1 tbsp tomato paste (optional for depth)
1 tbsp brown sugar
1 tsp yellow mustard
1 tbsp Worcestershire sauce
Salt and pepper, to taste
1 1/2 cups shredded cheddar cheese
1 (28–32 oz) bag frozen tater tots
Optional: chopped parsley or green onions for garnish
Preheat oven to 400°F (200°C).
In a large oven-safe skillet over medium heat, cook ground beef, onion, and bell pepper (if using) until the beef is browned and vegetables are softened. Drain excess grease.
Stir in garlic, ketchup, tomato paste, brown sugar, mustard, Worcestershire sauce, and season with salt and pepper. Simmer for 5 minutes until slightly thickened.
Remove skillet from heat. Sprinkle 1 cup of cheddar cheese over the sloppy joe mixture.
Arrange tater tots in a single layer over the top.
Bake for 25–30 minutes, or until tater tots are golden and crispy.
Sprinkle remaining cheddar cheese on top and bake for an additional 5 minutes, until cheese is melted.
Garnish with chopped parsley or green onions before serving, if desired.
For extra crispiness, broil the skillet for 2–3 minutes at the end.
Add a dash of hot sauce or chipotle for a smoky kick.
