A hearty breakfast bowl loaded with crispy tater tots, savory sausage, and rich gravy for the ultimate comfort food morning meal.

Ingredients

1 (32 oz) bag frozen tater tots

1 lb breakfast sausage (mild or spicy)

6 large eggs, scrambled

1 cup shredded cheddar cheese (or Colby Jack)

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk (warm)

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

Salt, to taste

Optional toppings: chopped green onions, hot sauce, or fresh parsley

Instructions

Cook tater tots according to package instructions until crispy and golden.

In a skillet over medium heat, cook sausage until browned and fully cooked. Remove from skillet and set aside.

Scramble eggs in a separate pan until fluffy; keep warm.

Make the gravy: In the same skillet used for sausage, melt butter. Whisk in flour and cook for 1–2 minutes. Slowly add warm milk while whisking until smooth and thickened (about 5 minutes). Season with garlic powder, salt, and pepper.

Assemble bowls: Start with a base of crispy tater tots, then top with sausage, scrambled eggs, and shredded cheese.

Spoon warm gravy over the top and garnish with optional toppings. Serve immediately.
