This Taco Tater Casserole is a cheesy, comforting weeknight dinner made with seasoned beef, black beans, corn, enchilada sauce, and crispy tater tots. A crowd-pleasing favorite!

Ingredients

1 lb ground beef

1 small onion, diced finely

1 clove garlic, minced

1 (4 oz) can diced green chiles

1 (1 oz) package taco seasoning mix

1 (15 oz) can black beans, rinsed and drained

1 (12 oz) package frozen corn

3 cups shredded Mexican blend cheese

1 (28 oz) package frozen tater tots

1 (10 oz) can red enchilada sauce

Optional Toppings:

Sliced olives

Chopped cilantro

Sour cream

Diced tomatoes

Instructions

Preheat oven to 375°F. Spray a 9×13-inch baking dish with cooking spray. (Optional: Bake tater tots separately for 10 minutes for extra crispiness.)

In a large skillet, brown the ground beef and diced onion over medium heat. Add the garlic in the last minute of cooking. Drain excess grease.

Stir in diced green chiles, taco seasoning, black beans, corn, and 2 cups of the shredded cheese. Mix well.

Pour the beef mixture into the prepared baking dish and spread evenly.

Top with frozen tater tots in a single layer.

Pour enchilada sauce evenly over the top.

Bake uncovered for 30–40 minutes, until tater tots are golden and crispy.

Sprinkle remaining 1 cup of cheese on top and return to oven for 2–3 minutes until melted.

Serve with desired toppings such as olives, cilantro, sour cream, or diced tomatoes.

Notes

Baking the tater tots for a few minutes before assembling helps make them extra crispy.

Feel free to customize with ground turkey or a vegetarian meat substitute.

Add jalapeños or hot sauce for a spicier kick.

Can be made ahead and refrigerated before baking—just add a few extra minutes to the bake time.
