This Sweet Potato Burger Bowl is a healthy, high protein dinner packed with seasoned ground beef, roasted sweet potatoes, and fresh toppings. An easy weeknight meal idea perfect for meal prep and family dinners.
1 lb lean ground beef
4 small sweet potatoes
1 tablespoon avocado oil
Shredded lettuce
Red onion, sliced
Diced tomatoes
Pickles
Worcestershire sauce
Garlic powder
Onion powder
Salt and pepper
Preheat oven to 400°F (200°C).
Peel and dice sweet potatoes into bite-sized pieces. In a large bowl, toss with avocado oil, garlic powder, onion powder, salt, and pepper.
Spread evenly on a lined baking sheet. Bake for 30–40 minutes, stirring halfway through, until tender and slightly crispy.
While the sweet potatoes are roasting, heat a skillet over medium heat. Brown the ground beef for about 8 minutes until fully cooked. Drain excess grease if needed.
Add Worcestershire sauce, additional garlic powder, onion powder, salt, and pepper to taste. Stir well.
Assemble bowls: start with shredded lettuce, add roasted sweet potatoes and seasoned ground beef.
Top with red onion, diced tomatoes, pickles, and drizzle with your favorite sauce. Serve immediately.
