This Strawberry Coconut Refresher is a bright, fruity summer drink made with fresh strawberries, coconut water, and chia seeds. Naturally sweet, dairy free, and ready in minutes, this healthy vegan beverage is perfect for pool parties and hot days.

Ingredients

1012 Strawberries (about 200g / 7 oz, fresh or frozen)

1½ cups Chilled Coconut Water

1 teaspoon Chia Seeds

1 teaspoon Honey or Maple Syrup (optional)

1 teaspoon Lemon Juice (optional, to balance sweetness)

Ice Cubes (for serving)

Fresh Basil Leaves (for garnish)

Instructions

Soak the Chia Seeds:
In a small bowl, mix chia seeds with ¼ cup coconut water. Let soak for 10 minutes (preferably refrigerated) until they swell and form a gel-like texture.

Blend the Strawberries:
Remove the tops of strawberries and add to a blender. Blend into a smooth puree. Reserve 2–3 slices for garnish.

Combine:
Add remaining chilled coconut water and honey or maple syrup (if using). Blend again briefly. Taste and adjust sweetness. Add lemon juice if needed to balance flavors.

Assemble & Serve:
Divide soaked chia seeds into 2 glasses. Add ice cubes and sliced strawberries. Pour the strawberry coconut mixture over the top. Garnish with fresh basil leaves and serve immediately.

Notes

Use ripe, bright red strawberries for best sweetness and flavor.

Fresh coconut water gives the best taste, but packaged works well too.

For extra nutrition, blend in tender coconut pulp (coconut malai).

Add sweetener only after tasting, as ripe strawberries may be naturally sweet enough.

Serve immediately for maximum freshness and vibrant flavor.
