Crispy on the outside, tender inside—these Southern fried chicken gizzards are soaked in buttermilk, seasoned to perfection, and fried golden.

Ingredients

1 pound chicken gizzards

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt, to taste

Black pepper, to taste

Oil for frying

Instructions

Prep Gizzards: Rinse chicken gizzards under cold water and pat dry.

Soak: Place gizzards in a bowl or zip-top bag. Pour in buttermilk and soak for at least 1 hour or overnight in the refrigerator for extra tenderness.

Seasoned Flour: In a separate bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper.

Heat Oil: In a deep skillet, pour oil about 1 inch deep and heat over medium until shimmering (about 350°F if using a thermometer).

Dredge: Remove gizzards from buttermilk, letting excess drip off. Coat well in the seasoned flour mixture.

Fry: Carefully add gizzards to hot oil and fry for 5–7 minutes, turning occasionally, until golden brown and cooked through.

Drain and Serve: Transfer to paper towels to drain. Serve hot with your favorite dipping sauce or sides.

Notes

Soaking in buttermilk helps tenderize the gizzards and adds flavor.

For extra crunch, double-dip in buttermilk and flour before frying.
