Turn a classic into comfort food with this cheesy Sloppy Joe casserole—loaded with beef, melty cheddar, and crispy tater tots for a family-friendly dinner win.

Ingredients

2 pounds ground beef

1 cup diced onion

1 green bell pepper, diced

2 garlic cloves, minced

1 cup ketchup

3 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 tablespoon yellow mustard

1 teaspoon chili powder

1½ cups shredded cheddar cheese

32 ounces frozen tater tots

Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C).

Cook the Beef:
In a large skillet over medium heat, cook ground beef and diced onion until browned and onions are soft. Drain excess grease.

Make the Sauce:
Stir in green pepper, garlic, ketchup, tomato paste, Worcestershire sauce, mustard, and chili powder. Simmer for 5 minutes to let the flavors combine and sauce thicken slightly.

Assemble the Casserole:
Transfer the beef mixture into a greased 9×13-inch baking dish and spread evenly. Top with shredded cheddar cheese.

Add the Tater Tots:
Arrange frozen tater tots in a single layer over the cheese.

Bake:
Bake for 20–25 minutes, or until the tater tots are golden and crispy. For extra cheese, sprinkle more cheddar over the top during the last 5 minutes of baking.

Serve:
Let cool slightly before serving. Optional: garnish with chopped parsley or jalapeños for extra flavor.

Notes

Brown Thoroughly: Make sure no pink remains in the beef before adding sauce ingredients.

Drain Grease: Prevent a greasy casserole by draining the fat after browning.

Add Veggies: Customize with corn, diced tomatoes, or jalapeños.

Crispy Tots: Bake uncovered for the crispiest topping.

Cheese Lovers: Top with more cheddar before the final minutes of baking for extra gooeyness.
