This sausage french toast roll-ups recipe combines sweet and savory flavors in a fun, handheld breakfast perfect for busy mornings.

Ingredients

8 slices of bread (white, whole wheat, or Texas toast)

4 breakfast sausage links (or sausage patties, crumbled)

4 large eggs

1/2 cup milk

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tsp vanilla extract

1/4 cup maple syrup (plus extra for serving)

2 tbsp butter (for cooking)

1/4 cup powdered sugar (for dusting)

Pinch of salt

Instructions

Prepare the Sausage:
Cook the sausage links (or crumbled sausage) in a skillet over medium heat until fully cooked, about 5-7 minutes. Set aside and slice the links into smaller pieces.

Prepare the French Toast:
In a shallow dish, whisk together eggs, milk, cinnamon, nutmeg, vanilla extract, and a pinch of salt. Set aside.

Assemble the Roll-Ups:
Lay each slice of bread flat and remove the crusts (optional). Flatten the bread slices slightly using a rolling pin. Place a few pieces of cooked sausage in the center of each slice of bread.

Roll and Coat:
Carefully roll the bread up around the sausage, securing it into a tight cylinder. Dip each roll in the egg mixture, coating it evenly on all sides.

Cook the Roll-Ups:
In a large skillet, melt butter over medium heat. Place the roll-ups seam-side down in the skillet and cook, turning occasionally, for 2-3 minutes until golden brown on all sides.

Serve:
Once the roll-ups are crispy and golden, remove them from the skillet. Dust with powdered sugar and drizzle with maple syrup. Serve warm.

Notes

You can add cheese or veggies (like sautéed spinach or peppers) inside the roll-ups for a savory twist.

For a healthier version, try using whole-grain bread and turkey sausage.

These roll-ups can be made ahead of time and reheated in the oven or microwave for a quick breakfast.
