Crispy golden tortillas stuffed with melty mozzarella, savory pepperoni, and classic pizza seasonings. This quick and easy dinner recipe is perfect for busy weeknights, game day snacks, or fun family meals.

Ingredients

4 medium flour tortillas

1 ½ cups shredded mozzarella cheese

½ cup shredded cheddar cheese (optional, for extra flavor)

½ cup sliced pepperoni

¼ teaspoon dried oregano

¼ teaspoon garlic powder

1 tablespoon olive oil or butter (for grilling)

½ cup pizza sauce or marinara sauce (for dipping)

Instructions

Heat the Pan:
Place a large skillet over medium heat and add olive oil or butter.

Assemble the Quesadilla:
Lay a tortilla flat. Sprinkle cheese over one half of the tortilla. Add pepperoni slices on top, then sprinkle oregano and garlic powder. Fold the tortilla in half.

Cook Until Crispy:
Place the folded tortilla into the skillet. Cook 2–3 minutes per side until golden brown and crispy, and the cheese is fully melted. Press gently with a spatula for even browning.

Repeat & Slice:
Repeat with remaining tortillas and ingredients. Allow to cool slightly, then slice into wedges.

Serve:
Serve warm with marinara or pizza sauce for dipping.

Notes

Add cooked sausage, mushrooms, or bell peppers for extra toppings.

For extra crispiness, brush the outside lightly with melted butter before grilling.

Cook on medium heat to prevent burning before the cheese melts.

These can be made in an air fryer at 375°F for 5–6 minutes, flipping halfway.
