One Pan Sausage Green Beans

A quick and hearty one-pan meal with savory sausage and tender green beans—perfect for busy nights.

Ingredients

1 lb smoked sausage or kielbasa, sliced into rounds

1 lb green beans, trimmed

1 lb baby potatoes, halved or quartered

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

Salt and pepper, to taste

Optional: fresh parsley for garnish, lemon wedges for serving

Instructions

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

Prep the ingredients: Slice sausage, halve or quarter potatoes, and trim green beans.

Toss everything in a large bowl with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.

Spread mixture evenly on the prepared baking sheet in a single layer.

Roast for 25–30 minutes, tossing halfway through, until potatoes are tender and sausage is browned.

Optional: Garnish with chopped parsley and serve with lemon wedges for brightness.

 

Notes

You can parboil potatoes for 5 minutes before roasting for quicker cook time.

Turkey sausage or plant-based sausage can be used as a substitute.

Add sliced bell peppers or onions for extra color and flavor.
