Ingredients

2 cups rolled oats

2 cups grated carrots

2 cups grated apples (excess moisture squeezed out)

1/2 cup unsweetened applesauce

1/2 cup chopped walnuts

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp baking soda

1/4 tsp salt

3 large eggs

1 tsp vanilla extract

Instructions

Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Grease a cake pan or line with parchment paper.

Step 2: Mix Dry Ingredients
In a large bowl, combine rolled oats, grated carrots, grated apples, chopped walnuts, cinnamon, nutmeg, baking soda, and salt.

Step 3: Combine Wet Ingredients
In a separate bowl, whisk together applesauce, eggs, and vanilla extract until smooth and well blended.

Step 4: Combine & Bake
Pour wet ingredients into the dry mixture. Stir gently until just combined — do not overmix. Transfer batter to prepared pan and spread evenly.
