These juicy oven-baked Italian meatballs are packed with flavor and ready in just 30 minutes—perfect for pasta, subs, or meal prep.
½ cup Italian bread crumbs
⅔ cup milk
1 lb ground beef (or meat of choice)
¼ medium onion, finely diced or grated
2 cloves garlic, minced
1 large egg, beaten
1 tsp salt (or to taste)
½ tsp black pepper
¼ cup Parmesan cheese (preferably Parmigiano-Reggiano)
1 tbsp fresh parsley (or 1 tsp dried parsley)
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or silicone mat.
In a mixing bowl, combine breadcrumbs and milk. Let sit for at least 5 minutes.
Add ground beef, onion, garlic, egg, salt, pepper, Parmesan, and parsley. Mix by hand until just combined — do not overmix.
Portion the mixture onto the baking sheet (using a scoop helps), and roll into 2-inch meatballs with wet hands.
