This zesty no-bake snack mixes crispy cereal with lemony white chocolate and powdered sugar for a bright, sweet treat. Perfect for summer parties, showers, or a citrusy snack fix!

Ingredients

9 cups crispy rice cereal squares

1 cup powdered sugar

1/2 cup white chocolate chips

1/4 cup butter

1 tbsp lemon zest (from about 1 lemon)

2 tbsp lemon juice

1 tsp vanilla extract

Yellow food coloring (optional)

Instructions

Prepare Cereal:
Place the crispy rice cereal in a large mixing bowl.

Melt Chocolate Mixture:
In a microwave-safe bowl, melt white chocolate chips and butter in 30-second intervals, stirring between each, until smooth.

Flavor It:
Stir in lemon zest, lemon juice, vanilla extract, and optional yellow food coloring.

Coat the Cereal:
Pour the lemon-chocolate mixture over the cereal. Gently stir to evenly coat.

Add Powdered Sugar:
Add the coated cereal to a large zip-top bag with powdered sugar in batches. Seal and shake until fully coated.

Cool & Set:
Spread the coated cereal on wax paper or a baking sheet. Let cool for about 30 minutes.

Notes

Use fresh lemon zest for the brightest flavor.

Store in an airtight container at room temperature for up to 5 days.

For more lemon punch, add a drop or two of lemon extract.

Optional: Decorate with extra zest or yellow sprinkles for a festive touch.
