A crisp and refreshing salad with sweet Honeycrisp apples, crunchy broccoli, and a creamy dressing that’s perfect year-round.
For the salad:
4 cups fresh broccoli florets, chopped small
2 Honeycrisp apples, cored and diced
1/2 cup dried cranberries
1/3 cup sunflower seeds (or sliced almonds)
1/4 cup red onion, finely diced
1/2 cup shredded cheddar cheese (optional)
For the dressing:
1/2 cup mayonnaise (or Greek yogurt for lighter option)
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper
In a large bowl, combine broccoli, apples, cranberries, sunflower seeds, red onion, and cheddar cheese (if using).
In a separate small bowl, whisk together mayonnaise (or yogurt), apple cider vinegar, honey, salt, and pepper until smooth.
