Juicy steak bites and golden potatoes tossed in rich garlic butter—this skillet meal is hearty, flavorful, and ready in under 30 minutes.

Ingredients

1 1/2 lbs sirloin steak (or ribeye), cut into bite-sized cubes

1 1/2 lbs baby potatoes, halved or quartered

3 tbsp olive oil, divided

4 tbsp unsalted butter, divided

5 cloves garlic, minced

1 tsp dried Italian seasoning (or a mix of thyme, oregano, rosemary)

1 tsp paprika

Salt and black pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)

Instructions

In a large skillet over medium-high heat, add 2 tbsp olive oil. Add potatoes, season with salt, pepper, paprika, and half the Italian seasoning. Cook for 15–20 minutes, stirring occasionally, until golden and tender. Transfer potatoes to a plate and keep warm.

In the same skillet, add 1 tbsp olive oil and 2 tbsp butter. Once hot, add steak bites in a single layer (work in batches if needed). Sear for 2–3 minutes per side until browned and cooked to your liking.

Reduce heat to medium, add remaining butter and garlic. Stir until garlic is fragrant and steak bites are coated.

Return potatoes to the skillet, toss everything together in the garlic butter sauce.

Garnish with fresh parsley and serve immediately.

Notes

For best results, pat steak dry before cooking for a nice sear.

Don’t overcrowd the skillet or the steak won’t brown properly.

Pair with a green salad or roasted vegetables for a complete meal.
