4 fresh salmon fillets (about 6 oz each)
3 tbsp unsalted butter
2 fresh lemons (juiced, plus zest of 1)
3 garlic cloves, minced
2 tbsp fresh dill or parsley, chopped
Salt, to taste
Black pepper, to taste
Nonstick spray or butter (for greasing baking dish)
Preheat oven to 375°F (190°C). Lightly grease a baking dish with nonstick spray or butter.
In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1 minute until fragrant (do not brown).
Stir in fresh lemon juice, zest, salt, and pepper to make the lemon butter sauce.
Place salmon fillets skin-side down in the baking dish. Drizzle half of the lemon butter sauce over the fillets.
