These fun Halloween quesadillas are shaped like jack-o-lanterns and filled with gooey cheese—an easy and festive dinner for spooky season!
2 flour tortillas
Shredded marble cheese or cheddar cheese
Optional: sour cream and salsa, for serving
Preheat Oven:
Preheat your oven to 400°F (200°C).
Cut Jack-o’-Lantern Face:
Stack two tortillas. Cut out a small notch at the top for the pumpkin stem.
Set one tortilla aside. On the top tortilla, cut out eyes, nose, and a mouth to create a jack-o’-lantern face. Use a toothpick to trace your design first if desired.
Assemble Quesadilla:
Place the uncut tortilla on a baking sheet. Sprinkle shredded cheese generously over it.
Top with the face-cut tortilla, lining up the pumpkin stems.
Bake:
Bake at 400°F for 8–10 minutes, or until the cheese is melted and the edges of the tortilla are lightly golden.
Serve:
Slice and serve warm with sour cream and salsa on the side.
Use different types of cheese (mozzarella, Monterey Jack, etc.) for fun flavor variations.
For extra crispiness, brush the tortillas lightly with oil before baking.
