A colorful, refreshing side made with tri-color rotini, crisp veggies, olives, feta, and tangy Italian dressing. Perfect for picnics, potlucks, or quick lunches.
1 box (12 oz) tri-color rotini pasta
1 cup chopped cucumber (peeled and seeded)
1 cup halved cherry or grape tomatoes
1 cup crumbled feta cheese
1 can (2.25 oz) sliced black olives, drained
¼ cup finely diced red onion
½ – 1 cup Italian salad dressing (store-bought or homemade)
Cook pasta in well-salted water according to package instructions until al dente.
Drain and rinse under cold water to cool; drain thoroughly.
In a large bowl, combine cooled pasta, cucumber, tomatoes, feta, olives, and red onion.
Pour in Italian dressing and toss everything together until well-coated.
Chill briefly or serve immediately. Stir and add more dressing before serving, if needed.
Use mozzarella or Parmesan in place of feta for a different flavor.
Add protein like chickpeas, salami, or grilled chicken.
Mix in more veggies like bell peppers, carrots, or broccoli.
Make it ahead and chill—refresh with extra dressing before serving.
Use gluten-free pasta and dairy-free cheese for allergen-friendly options.
