Soft, cinnamon-sugar coated churro bites baked to golden perfection—perfect for parties, snacking, or sweet cravings.
For the Churro Bites:
1 cup water
½ cup unsalted butter
1 tbsp sugar
¼ tsp salt
1 cup all-purpose flour
3 large eggs
1 tsp vanilla extract
Cinnamon Sugar Coating:
½ cup granulated sugar
1½ tsp ground cinnamon
3 tbsp melted butter (for brushing)
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
Reduce heat to low and stir in the flour all at once. Mix vigorously until a dough forms and pulls away from the sides (about 1–2 minutes).
Transfer dough to a mixing bowl and let cool for 5 minutes.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract. Dough should be smooth and pipeable.
Transfer dough to a piping bag fitted with a large star tip. Pipe 1-inch rounds onto the prepared baking sheet.
Bake for 20–22 minutes, or until puffed and golden.
Remove from oven and let cool for 2 minutes. Brush each bite with melted butter, then roll in cinnamon sugar mixture.
Serve warm or at room temperature.
Best served fresh but can be reheated in the oven at 300°F for a few minutes.
For dipping, serve with chocolate sauce, dulce de leche, or vanilla glaze.
Add a pinch of nutmeg or cardamom to the dough for a flavor twist.
Freeze uncoated bites for up to 1 month and coat after reheating.
