1 large English cucumber, thinly sliced
1½ cups fresh strawberries, hulled and sliced
¼ cup red onion, thinly sliced (optional)
2 tbsp fresh mint or basil, chopped
2 tbsp feta cheese, crumbled (optional)
2 tbsp balsamic glaze or dressing (or homemade dressing below)
Optional Homemade Dressing:
1 tbsp balsamic vinegar
1 tbsp honey or maple syrup
1 tsp olive oil
Pinch of salt and black pepper
In a large bowl, combine sliced cucumber, strawberries, and red onion (if using).
