Crockpot Pizza Chicken is a cheesy slow cooker dinner made with tender chicken breasts, rich tomato sauce, classic pizza seasonings, and melted mozzarella loaded with your favorite toppings.
2 pounds boneless, skinless chicken breasts
1 cup tomato sauce
6–8 ounces pizza toppings of your choice (cooked meats and/or raw vegetables)
2 cups shredded mozzarella cheese
1 cup low-sodium chicken broth (or water, for Instant Pot only)
2 teaspoons dried oregano
1 ½ teaspoons dried basil
1 teaspoon dried thyme
1 teaspoon garlic salt (or more to taste)
½ teaspoon cayenne
¼ teaspoon fennel or dill seed
Slow Cooker Method
Mix Seasonings:
In a small bowl, combine oregano, basil, thyme, garlic salt, cayenne, and fennel (or dill seed).
Prep Slow Cooker:
Lightly spray the slow cooker with cooking spray.
Add Chicken:
Place chicken breasts in the slow cooker. Add pizza seasoning and tomato sauce. Stir to coat evenly.
Add Cheese & Toppings:
Sprinkle mozzarella over the chicken. Add your preferred pizza toppings on top.
Cook:
Cook on HIGH for 2–3 hours or LOW for 4–6 hours, until chicken reaches an internal temperature of 165°F.
Instant Pot Method
Add Liquid:
Pour 1 cup chicken broth (or water) into the Instant Pot.
Mix Chicken:
In a bowl, combine chicken, seasonings, and tomato sauce. Add mixture to the Instant Pot. Top with your preferred pizza toppings (do not add cheese yet).
Pressure Cook:
Close lid and seal valve. Cook on HIGH pressure for 14 minutes.
Release Pressure:
Quick release the pressure once cooking time is complete. Ensure chicken reaches 165°F internally.
Add Cheese:
Top with shredded mozzarell
Popular toppings: pepperoni, cooked sausage, mushrooms, bell peppers, olives, or onions.
For extra browning, place cooked chicken under the broiler for 2–3 minutes after adding cheese.
Serve over pasta, rice, or zucchini noodles.
Store leftovers in an airtight container for up to 3 days.
