A rich and flavorful pasta made with roasted red peppers, fresh basil, and creamy burrata—perfect for an easy yet elegant dinner.
8 oz fettuccine or penne pasta
1 cup roasted red peppers (jarred or homemade)
1 cup heavy cream
4 oz burrata cheese
1/2 cup fresh basil, chopped
3 cloves garlic, minced
2 tbsp olive oil
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Prepare ingredients by chopping basil and mincing garlic.
Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
In a skillet over medium heat, drizzle olive oil and sauté garlic until fragrant.
Add roasted red peppers and cook for a few minutes. Stir in heavy cream and let it simmer until slightly thickened.
Mix in Parmesan cheese, then add drained pasta along with reserved pasta water to achieve desired consistency.
Stir in fresh basil, season with salt and pepper, and serve topped with burrata cheese.
Use jarred roasted peppers for convenience, or roast your own for deeper flavor.
Burrata should be added just before serving to maintain its creamy texture.
Substitute heavy cream with coconut cream for a dairy-free version.
