A warm and fluffy cinnamon roll mug cake made with cottage cheese—high protein, quick, and perfect for a single-serve treat.

Ingredients

¼ cup cottage cheese

1 egg

3 tbsp flour (all-purpose or oat flour)

½ tsp baking powder

1 tbsp maple syrup or honey

½ tsp vanilla extract

Pinch of salt

For the Cinnamon Swirl:

1 tsp cinnamon

1 tsp brown sugar (or coconut sugar)

½ tsp melted butter (optional)

For the Glaze (optional):

2 tbsp powdered sugar

1 tsp milk

Instructions

In a blender or small food processor, blend cottage cheese, egg, flour, baking powder, maple syrup, vanilla, and salt until smooth.

Pour batter into a greased microwave-safe mug.

In a small bowl, mix cinnamon, sugar, and melted butter. Swirl mixture into the mug batter with a toothpick or knife.

Microwave for 1–2 minutes, or until the cake is set and fluffy (time depends on microwave wattage).

For glaze, whisk powdered sugar and milk until smooth. Drizzle over warm mug cake.

Enjoy immediately!

Notes

Use oat flour for a gluten-free option.

Add a scoop of protein powder for an even higher protein treat.

Can also be baked in a ramekin at 350°F (175°C) for 12–15 minutes.

Top with Greek yogurt or cream cheese frosting for a healthier glaze.
