Cool Whipped Lemon Frosting

Light, fluffy, and citrusy—this whipped lemon frosting is the easiest way to brighten cakes, cupcakes, and cookies with fresh lemon flavor.

Ingredients

1 cup heavy whipping cream, chilled

½ cup powdered sugar

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Instructions

In a large mixing bowl, combine chilled heavy whipping cream, powdered sugar, lemon zest, lemon juice, and vanilla extract.

Using an electric mixer, begin on low speed to combine, then gradually increase to medium-high speed.

Whip for 3–5 minutes, or until stiff peaks form. Be careful not to over-whip.

Use immediately to frost your favorite cake, cupcakes, or cookies.

If not using right away, store in the refrigerator for up to 1 day. Re-whip gently before use if needed.

Notes

For more tang, add an extra tablespoon of lemon juice.

For extra sweetness, mix in an additional ¼ cup powdered sugar.

Add finely chopped mint or substitute with lime or orange zest for variation.

A drop of natural food coloring can give it a vibrant, festive look.

Best used fresh, as whipped cream can deflate over time.
