This indulgent churro stuffed French toast is crispy, creamy, and sweet — filled with cream cheese and coated in cinnamon sugar. A brunch dream come true!

Ingredients

For the Filling:

4 oz cream cheese, softened

2 tablespoons powdered sugar

½ teaspoon vanilla extract

For the French Toast:

8 slices thick-cut bread (brioche or Texas toast recommended)

2 large eggs

½ cup milk

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

2 tablespoons granulated sugar

Pinch of salt

2 tablespoons butter (for frying)

For the Cinnamon Sugar Coating:

½ cup granulated sugar

1 teaspoon ground cinnamon

Instructions

Make the Filling:
In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
Spread evenly on 4 slices of bread and top with the remaining 4 slices to form sandwiches.

Make the Egg Mixture:
In a shallow dish, whisk eggs, milk, vanilla, cinnamon, sugar, and salt until well combined.

Pan-Fry the French Toast:
Heat a skillet or griddle over medium heat and add butter.
Dip each sandwich into the egg mixture, coating all sides.
Cook each sandwich for 3–4 minutes per side until golden brown and cooked through.

Coat in Cinnamon Sugar:
In a shallow bowl, mix the sugar and cinnamon.
While still hot, coat each stuffed French toast in the cinnamon-sugar mixture.

Serve and Enjoy:
Serve warm with maple syrup, whipped cream, chocolate sauce, or fresh berries.

Notes

Add a pinch of nutmeg to the egg mixture for a deeper flavor.

Best served fresh, but leftovers can be stored in an airtight container for 1 day.
