Rich, moist, and surprisingly tender, this chocolate potato cake is the ultimate dessert twist—easy to make and impossible to resist.

Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsweetened cocoa powder

1 cup mashed potatoes (about 2 medium potatoes, smooth and cooled)

½ cup vegetable oil

3 large eggs

1 tablespoon baking powder

¼ teaspoon salt

1 tablespoon vanilla extract

½ cup semi-sweet chocolate chips (optional)

Powdered sugar, for dusting (optional)

Instructions

Preheat the Oven: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Potatoes: Peel, boil, and mash the potatoes until smooth. Allow them to cool.

Mix Dry Ingredients: In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, and salt.

Mix Wet Ingredients: In a separate bowl, whisk together mashed potatoes, vegetable oil, eggs, and vanilla until smooth.

Combine: Gradually stir wet ingredients into the dry mixture until fully combined and no lumps remain.

Optional Add-Ins: Fold in chocolate chips for extra richness.

Divide and Bake: Pour batter evenly into the prepared pans. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Let cakes cool in pans for 15 minutes, then transfer to wire racks to cool completely.

Assemble: If desired, frost the bottom layer, stack the second on top, and finish with frosting or whipped cream.

Finish with Powdered Sugar: Dust with powdered sugar just before serving.

Notes

Mashed potatoes should be plain (no butter or milk added).

Cake layers can be frozen individually, wrapped tightly in plastic wrap.
