These no-bake chocolate cereal bars are crunchy, creamy, and chocolatey—an easy treat that’s fun to make and even better to eat.
3 cups crisp rice cereal
1 cup semisweet chocolate chips
½ cup creamy peanut butter
¼ cup unsalted butter
1 tsp vanilla extract
In a small saucepan over low heat, melt the unsalted butter and peanut butter together. Stir until smooth and fully combined.
Remove from heat and immediately stir in the chocolate chips until completely melted and glossy.
Mix in the vanilla extract.
In a large bowl, pour the chocolate mixture over the crisp rice cereal. Stir well to evenly coat all the cereal.
Let the mixture cool slightly, then roll into small balls using your hands.
Place the balls on a parchment-lined baking sheet and refrigerate until firm (about 30 minutes).
Store in an airtight container in the fridge.
