Flaky croissants stuffed with juicy chicken, crisp romaine, and creamy Caesar dressing – perfect for lunch or brunch.

Ingredients

2 cups cooked chicken breast, shredded or chopped

1/3 cup Caesar dressing (store-bought or homemade)

1/4 cup grated Parmesan cheese

1 tsp lemon juice (optional for brightness)

Salt and pepper, to taste

1 cup chopped romaine lettuce

4 large buttery croissants, sliced horizontally

Optional: croutons (crushed), for crunch

Optional: sliced tomatoes or bacon for extra layers

Instructions

Make the filling: In a bowl, combine cooked chicken, Caesar dressing, Parmesan cheese, and lemon juice. Season with salt and pepper. Mix well.

Add lettuce: Gently fold in chopped romaine right before assembling to keep it crisp.

Assemble sandwiches: Slice each croissant in half. Layer the chicken Caesar mixture evenly onto the bottom halves.

Top & serve: Add extra toppings like crushed croutons or tomatoes if desired. Cover with the top half of the croissant and serve immediately.

 

Notes

Use rotisserie chicken for a quick shortcut.

For meal prep, keep the lettuce separate and assemble just before serving.

Toast croissants slightly for extra texture.
