Cheeseburger Salad is a fresh, low carb twist on a classic burger loaded with seasoned ground beef, crisp iceberg lettuce, shredded Colby jack cheese, juicy tomatoes, red onion, and dill pickles. Finished with creamy Thousand Island dressing, this easy dinner salad is hearty, flavorful, and ready in minutes.

Ingredients

pounds very lean ground beef, browned and drained

6 cups chopped iceberg lettuce

1½ cups shredded Colby Jack cheese

1 cup diced Roma tomatoes

1 cup sliced red onion

½ cup diced dill pickles

Thousand Island dressing (to taste)

Instructions

Add chopped iceberg lettuce to an extra-large serving bowl.

Evenly sprinkle the warm, browned ground beef over the lettuce.

Top with shredded Colby Jack cheese, diced Roma tomatoes, sliced red onion, and diced dill pickles.

Toss gently to combine.

Drizzle with as much or as little Thousand Island dressing as desired. Serve immediately.

Notes

For extra flavor, season the ground beef with salt, pepper, and a splash of Worcestershire sauce while cooking.
