These molten cheeseburger lava cakes are loaded with cheddar, mozzarella, and cream cheese inside juicy beef patties. A fun and flavorful twist on burgers with a gooey, melty surprise center.

Ingredients

→ Beef Patties

1 pound ground beef (80/20 blend)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt, to taste

Freshly ground black pepper, to taste

→ Cheese Lava Center

3.5 ounces shredded cheddar cheese

2 ounces shredded mozzarella cheese

1 ounce cream cheese, softened

→ For Assembly and Cooking

2 tablespoons unsalted butter

BBQ sauce or ketchup glaze (optional)

Instructions

Prepare Cheese Lava Centers:
In a bowl, combine cheddar, mozzarella, and cream cheese. Form into 6 cheese balls using 2–3 tablespoons each. Freeze for 15–20 minutes until firm.

Season the Beef:
In a large bowl, mix ground beef, garlic powder, onion powder, paprika, salt, and pepper. Mix gently to combine.

Assemble Lava Cakes:
Divide beef into 12 thin patties. Place a frozen cheese ball on one, top with another patty, and press edges to seal. Shape into thick burger “cakes.”

Sear and Bake:
Preheat oven to 375°F (190°C). In an oven-safe skillet, melt butter over medium-high heat. Sear patties for 2–3 minutes per side until browned.

Bake to Finish:
Transfer skillet to the oven. Bake for 10–12 minutes, then rest for a few minutes before slicing.

Serve:
Optionally brush tops with BBQ sauce or ketchup glaze. Serve immediately while the cheese center is molten.

Notes

Freezing the cheese balls helps achieve the dramatic molten center when sliced.

For extra flavor, add cooked bacon bits or jalapeños to the cheese mixture.

Serve with roasted veggies, fries, or a fresh salad to balance richness.
