The Best cheese tortellini and sausage skillet made with juicy Italian sausage, creamy sauce, and cheesy tortellini. A comforting one-pan meal that’s ready in minutes and full of bold flavor.

Ingredients

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 lb (450 g) cheese tortellini (fresh or frozen)

1 lb (450 g) Italian sausage (mild or spicy)

1 red bell pepper, diced

1 cup spinach, chopped

½ teaspoon red pepper flakes (optional)

½ cup chicken broth

½ cup heavy cream

Salt and black pepper, to taste

Grated Parmesan cheese, for garnish (optional)

Instructions

Heat the Skillet
Heat a large skillet over medium heat and add the olive oil.

Cook the Sausage
Remove the casing from the Italian sausage and crumble it into the skillet. Cook for 5–7 minutes until browned and cooked through.

Sauté Aromatics
Add the diced onion and minced garlic. Cook for 2–3 minutes until softened and fragrant.

Add Vegetables
Stir in the diced red bell pepper and cook for 3–4 minutes until slightly tender.

Cook the Spinach
Add the chopped spinach and cook for about 2 minutes until wilted.

Cook the Tortellini
Meanwhile, cook the cheese tortellini according to the package instructions. Drain and set aside.

Make the Sauce
Stir in the chicken broth, heavy cream, red pepper flakes (if using), salt, and black pepper. Simmer for 2–3 minutes to allow the sauce to slightly thicken.

Combine Everything
Add the cooked tortellini to the skillet and toss gently to coat with the sauce. Simmer for 3–4 minutes so the flavors blend together.

Serve
Sprinkle with grated Parmesan cheese if desired and serve hot.

Notes

Fresh tortellini cooks faster than frozen, so adjust cooking time if needed.

For extra creaminess, add ¼ cup cream cheese or more Parmesan.

Substitute kale or arugula for spinach if preferred.

Add mushrooms or zucchini for extra vegetables.
