The best buttery vanilla peach cobbler made with sweet peaches, rich vanilla flavor, and a soft golden crust. A classic fruit dessert perfect for family gatherings.

Ingredients

4 cups sliced fresh or frozen peeled peaches

1 cup granulated sugar, divided

1 tablespoon brown sugar (optional)

1 teaspoon vanilla extract

1 teaspoon lemon juice (optional)

1/2 teaspoon ground cinnamon or nutmeg (optional)

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

Instructions

Prepare the peaches:
If using fresh peaches, blanch them briefly in hot water, peel the skins, and slice them. In a bowl, combine the sliced peaches with 1/2 cup granulated sugar and vanilla extract. Let the mixture sit for a few minutes to release juices.

Preheat the oven:
Set the oven to 350°F (175°C).

Prepare the baking dish:
Pour the melted butter evenly into a 9×9-inch baking dish.

Mix the dry ingredients:
In a bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup sugar.

Prepare the batter:
Add the milk to the dry ingredients and stir gently until a smooth batter forms.

Assemble the cobbler:
Pour the batter over the melted butter in the baking dish, spreading it evenly without stirring.

Add the peaches:
Spoon the peach mixture, along with any syrup, evenly over the batter.

Add finishing touches:
Sprinkle with brown sugar, cinnamon, or nutmeg if using, and drizzle a little extra vanilla for enhanced aroma.

Bake the cobbler:
Place the dish in the oven and bake for 45–50 minutes, until the crust is golden brown and the edges are bubbling.

Cool and serve:
Let the cobbler cool slightly before serving so the filling thickens and flavors develop.

Notes

Frozen peaches work well; thaw and drain excess liquid before using.

Serve warm with vanilla ice cream or whipped cream for a classic pairing.

Avoid stirring the batter and butter layers; this helps create the cobbler’s signature crust.

Store leftovers in the refrigerator for up to 3 days.
