Crispy toasted bread topped with juicy tomatoes, creamy mozzarella, and fresh basil—this classic bruschetta is an easy, elegant appetizer that bursts with summer flavor.

Ingredients

1 baguette or rustic Italian bread, sliced

2 large ripe tomatoes, diced

8 oz fresh mozzarella, diced or torn

2 garlic cloves, halved

Fresh basil leaves, roughly chopped

Extra-virgin olive oil, to taste

Salt and freshly ground black pepper, to taste

Instructions

Preheat oven to medium-high (or heat a grill pan).

Arrange bread slices on a baking sheet. Lightly brush with olive oil and toast until golden, 5–7 minutes.

While still warm, rub each slice with the cut side of garlic for added flavor.

In a bowl, combine tomatoes, mozzarella, basil, a drizzle of olive oil, salt, and pepper.

Spoon the tomato-mozzarella mixture over the toasted bread slices.

Serve immediately while the bread is crisp and the cheese is soft.

Add a drizzle of balsamic glaze for a sweet-tart finish.

Sprinkle red pepper flakes or Italian seasoning for extra flavor.
