BBQ chicken tater tot casserole loaded with shredded chicken, BBQ sauce, cheddar cheese, corn, and crispy tater tots. An easy comfort food dinner that’s hearty, cheesy, and perfect for busy weeknights.
2 cups cooked, shredded chicken (rotisserie chicken works great)
1 cup BBQ sauce
1 cup shredded cheddar cheese
1 cup frozen corn
1/2 cup diced red onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1 bag frozen tater tots (32 oz)
1/4 cup chopped fresh parsley (for garnish)
Preheat the oven to 400°F (200°C).
Shred the cooked chicken into bite-sized pieces if not already prepared.
In a large mixing bowl, combine the shredded chicken and BBQ sauce, stirring until evenly coated.
Add the cheddar cheese, frozen corn, diced red onion, garlic powder, onion powder, and black pepper. Mix until well combined.
Spread the chicken mixture evenly into a greased 9×13-inch baking dish.
Arrange the frozen tater tots in a single layer over the top of the chicken mixture.
Bake for 30–35 minutes, or until the tater tots are golden brown and crispy.
Remove from the oven and allow the casserole to cool for about 5 minutes.
Sprinkle with fresh chopped parsley before serving.
Shortcut tip: Rotisserie chicken makes this recipe even quicker.
Extra cheesy: Add an extra 1/2 cup cheddar on top before baking.
Spicy version: Mix in diced jalapeños or a dash of hot sauce.
