These healthier apple fritters are oven-baked instead of fried—packed with tender apples, cinnamon spice, and just the right amount of sweetness.

2 large apples, peeled, cored, and finely diced

1 ½ cups all-purpose flour

¼ cup granulated sugar

¼ cup brown sugar

2 teaspoons baking powder

1 ½ teaspoons ground cinnamon

½ teaspoon salt

⅔ cup milk

2 eggs, lightly beaten

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Powdered sugar, for dusting (optional)

Instructions

Preheat oven to 350°F (175°C). Lightly grease a baking sheet or line with parchment paper.

In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.

In a separate bowl, whisk together milk, eggs, melted butter, and vanilla.

Gently fold the wet ingredients into the dry ingredients until just combined (some lumps are okay).

Fold in the diced apples, distributing evenly throughout the batter.

Drop batter in ¼-cup portions onto the baking sheet, spacing apart.

Bake for 15–20 minutes, or until golden brown and set.

Cool on the pan for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.

Notes

Add a pinch of nutmeg or allspice for extra autumn flavor.

Best served fresh but can be stored in an airtight container for 2–3 days.

Reheat briefly in the oven or air fryer for best texture.
